mission accomplished

So for any of you who don't already know this about me - I'm kind of a flake. I have a tough time with follow through. I have about a million projects sitting around waiting to be finished. I get ideas for something I'm going to do that's going to be "my new thing" that's going to make us millions, and within about a month I'm bored of it and probably never pick it up again. This is why I have had an empty etsy shop for the past 2 1/2 years. This is why I haven't given a massage since Quinn was born. This is why I haven't made a windchime in years (even though I sold every last one of them almost instantly). Ugh.
Anyways, Mushroom Week is now over and I can happily say that I did not punk out. EVEN THOUGH I got a cold. Wow.
For our last meal we actually had company!! Zach's parents had been up north with friends for the week so on their way home they stopped here and played with the boys and had dinner with us. I love having people over for dinner. And we NEVER have people over for dinner. Maybe that should be my next goal - someone invited for dinner every night of the week..... That would be a lot of food.... Anyways, we had a classic - spaghetti and meatballs with a big salad and garlic bread. Now, you can be the judge of this, but here's the main source of mushrooms for the meal:

That totally counts, right? Well, I guess it doesn't matter if it does or doesn't because earlier in the day I made the same sandwiches we'd had on Saturday. They're that good. Anyways, I love Ragu. I don't think that will ever change. It's a major staple in our food storage. :) For the meatballs I made my favorite, favorite, FAVORITE meatless meatballs that you MUST try. I know it sounds hokey every time I talk about these meatballs. You probably think we've eaten them so much that we just don't realize that they're actually nasty or something like that. But Zach's dad ate them last night and didn't have ANY IDEA that they weren't meat until after dinner was over. And he's a meat man. He was super surprised and he really liked them. We enjoyed our dinner so much that I totally forgot to take a picture of the food! So here's a shot of the aftermath:


And both Quinn and Max loved it. FINALLY. In fact, Max kept asking for more meatballs. Adorable.
Here's my version of the meatballs - Be brave. Give it a try. You won't regret it.
4 eggs
1/2 package of Onion Soup Mix
1 TBS dried minced onions
2 cups shredded cheddar
3/4 cup chopped walnuts (I buy the bags of shelled walnuts - measure out 1 cup and put them in your food processor for a minute or so. Perfect.)
1 cup dry Italtian Syle Breadbrumbs
1 can of broth (I've use both chicken broth and vegetarian broth. Both are really good.)
Preheat oven to 350. Mix everything BUT the broth (that comes later) in the above order. Once it's all well mixed, shape into 1-1 1/2 inch balls. I usually get between 20 and 25 meatballs. Put them in an 8 x 8 square pan. Then pour the broth over the top. It should just cover them. Cover with foil and bake for 1 hour. Keep covered until you're ready to sit down and eat.
PERFECT. We eat these with spaghetti or even plain with mashed potatoes and veggies. You will like these. I promise.
Now back to normal life. Hmmm.....

That is actually kind of a cute picture. I like your hair. Good work on the mushrooms. Spaghetti, how could we have forgotten spaghetti? A classic. Maybe I will even make some tonight.

Well, i for one am VERY proud of you. Knowing me, I would have given up after day two. So CONGRATS for sticking to it!! I'm wondering about those meatballs... and if i could trick Blair into trying them. He, Elliot, and Quinn should all have a party together where they can eat the 4 foods that they like and let the rest of us enjoy something new and exciting together. :)

Also i was thinking yesterday how funny it is that when I saw you a couple weeks ago how totally casual and normal it felt hanging out with you, even though it's been like 2 years, and how kind of simultaneously weird and awesome that is. I love you dearly, and am looking forward to the Parowan vs. North Sevier game more that you could possibly imagine (mainly because i'm planning on ditching all but the 4th quarter of the game and hanging out with you)

Oh... and for me it's Prego Traditional. If i have less than 2 bottles in the pantry and 1 in the fridge, we're running low. :)
