my personal opinion

Wow.

The cake.

You know how sometimes you take a bite of cake and it's so flimsy you can hardly tell there's anything in your mouth? Except, of course, for the overpowering sugary taste of gritty frosting? Well, this is not that cake. This is chocolate cake for people who are serious about chocolate cake. And let me just tell you right now - I'm serious about chocolate cake.
And this one just rocked my world.

That layer in the middle? It has cheese in it. CHEESE! Cheese that costs $7 per 8oz!!! It was the best part of the whole cake. It was insane. I could have eaten it by the spoonful. No wait, I DID.
The person who created that little concoction has just made the world a better place.
Now, the actual cake part is much more like a brownie. I had a heck of a time getting it out of the pans. And in the end it totally fell apart and I had to piece the whole thing together with icing. Most likely my fault. But, it was a small price to pay for a chunk of cake that you have to take the time to chew in order to taste all of it's wonderfulness. This isn't the kind of thing where you take a bite and move on with your life. After eating this, life will never be the same.
And since it was my little "Cake and movies night" with Zach away, I didn't think twice about cutting myself a rather generous piece (ok, it was actually a typical "Katie sized" piece) at 11:00 at night. I'd worked so hard getting the kids in bed (yeah, their 7:30 bedtime turned into an 8:30 bedtime) and making this massive cake that it was going to be such a treat to eat this whole slice without any interruptions or greedy beggars trying to get some. And yet three bites into it I realized I wouldn't be able to eat the whole thing. Here's how far I got (along with a small taste of the aftermath of dishes):

What a pansy.
But seriously, it's that good. You'll break the bank buying everything to make it, but if you want the real deal, this is it. One thing that I think could help the cost (and if you're not into the whole dark chocolate movement) just use semi-sweet chips instead of the 60% bittersweet cacao chips. I don't know if there would be a huge difference between the two. But then again, there may not be a huge difference in price between the two either.
Another thing that I think would make this cake even better is in making the frosting, instead of using a stick of butter, use cream cheese. I'm not a big fan of chocolate frosting, but cream cheese chocolate frosting... That's a whole other story. That would be incredible.
Here's the status of the cake right now (and yes, we've been sharing with others):

And don't you like the rubbermaid lid/cake plate? Yeah. I scoured the house trying to find something more respectful, but this is the only flat surface I had that was big enough. And I like how the cake practically has it's own zip code in the fridge. It won't much longer. I don't think it will last the weekend. In fact, it may not last the evening.

Mmmm.

And the movies?

Bride Wars was silly. But that was to be expected.

And He's Just Not That Into You was mostly cute, with the occasional disgustingly crude term that made me feel sick and glad I was watching it alone. Don't you hate that?

Anyways, make the cake.

That was most delicious! So delicious that I don't think I will ever make it because I would eat it all and have to get rid of all my clothes and buy new ones...in a size 20!!!

Hats off to you Katie!! :) That looks FABULOUS! Maybe when we get together sometime in the next 5 years, we'll split the $$ of making it. :)

Sure ... make it the weekend my brother comes, not the weekend I come... from 20 hours away! I see how this family works. ;-) Love the pics of your kiddos and the hot air balloons. Too cute!
